December 9, 2020 • In Mains, Christmas

Whether you’re going for a relaxed buffet or a full-on three courses, we have loads of delicious recipes for Boxing Day dinners and desserts. Use up your leftovers and enjoy the day-after-the-big-day in style.

It’s the ideal time to start using up those Christmas Day leftovers, too, so whether you go for a relaxed Boxing Day buffet, or pick a starter, showstopping main and gorgeous dessert, we have all the Boxing Day recipes you need.

If you’re going down the starter route, or putting together a buffet, use your leftover roast veg to top gorgeous little bruschetta. Gennaro’s tip? It’s all in the seasoning, so don’t forget the balsamic and lemon juice.

For a lovely cosy starter to share, gooey baked Camembert with loads of crusty bread for dipping is always a winner. Add finely chopped dried cranberries and mixed nuts for extra festive flavour.

A simple recipe from Jamie’s 7 Ways book that uses just eight ingredients to bring together a delicious salmon centrepiece. Great as part of a buffet spread, or serve it up with your favourite potatoes and loads of lovely veg.

Mix up any leftover veg with rogan josh paste, cumin and chilli for a flavour-packed pie full of attitude. Make your own pastry (regular or gluten-free), or just roll out some shop-bought to keep things super-simple!

A family favourite that makes for a really versatile Boxing Day dinner – just swap in whatever veg you have (or whatever veg your kids will eat!). Delicious with cold cuts or a fresh green salad.

With a sticky mulled wine-inspired glaze, this sweet baked ham will be the star of any festive spread. Served hot or cold, it’s a Boxing Day winner.

A colourful and flavour-packed recipe that’s a great vehicle for using up leftover turkey or ham. Enjoy the subtle hit of garlic and thyme, and finish with a squeeze of fresh lemon.

Serve up this fruity pud beautifully in little glass bowls – or go for the DIY approach and lay everything out, letting everyone build their own, for delicious Christmas chaos!

We really do love leftovers – and what better way to use up fruit cake, custard and double cream than layering up into this elegant dessert, for the perfect ending to your Boxing Day dinner.
