Happy Pear’s Irish stew with root veg

[jo-video jw="zv2tjpSB"]

Irish brothers David and Stephen have created a nourishing veggie stew and kale colcannon mash recipe. Hearty root veg and lentils make this a super-satisfying dish that perfectly complements the creamy kale and spring onion mash.

This lovely little dish makes a delicious starter, or a light lunch. You need to use really dry potatoes, so, if you’re not using leftovers, be sure to let your spuds cool so they lose as much moisture as possible before starting the recipe.

Start the day the Irish way with a toasted slice of soda bread, drizzled with olive oil and topped with a beautiful piece of fish. Add a perfectly poached egg, and you’re laughing.

Easy bacon and cabbage pie with mustard

With that classic Irish combo of bacon and cabbage, Donal Skehan’s puff pastry pie is wonderfully simple to put together and is a real crowd-pleaser. Just top your stew pan with a sheet of pastry, bake until golden and serve at the table. Beautiful!

How to make Irish coffee

The coffee king Mike Cooper's here with his take on one of the best-known boozy coffee cocktails around. Invented in Ireland in the 1940s and made with Irish whiskey, coffee, brown sugar and lightly whipped cream, this recipe is a St Patrick's Day winner.
