How to preserve summer produce

September 27, 2017 • In Summer, Fruit

September marks the start of autumn – a season packed-full of gorgeous produce made for hearty, comforting dishes. But if you want to hang onto those sunshine flavours, these three simple recipes make the most of summer’s final few ingredients.

Homemade ketchup is hard to beat, especially when made with the last of summer’s tomatoes. For super-charged fish and chips or a knockout burger condiment, get a batch of this on the go. This recipe keeps for up to six months, giving you a little sunshine well into the new year (if you haven’t eaten it all before then).

Nothing says summer like a jar of fruit jam - spread thick on buttered toast or spooned on creamy rice pudding. Use whatever summer fruit you have to hand and follow our simple guide to bottle up those gorgeous flavours.

HAVE A GO AT FERMENTATION

How_to_ferment_LEAD.jpg

Fermenting is much simpler than you might think! With just a few ingredients – summer cabbage or fennel work particularly well – you can create something super-cheap and delicious that just happens to be good for you, too! Packed-full of ‘friendly bacteria’, fermented foods like kimchi and sauerkraut are thought to aid our gut health.
