Ingredients

1 x 250g pouch of Jamie Oliver Aubergine Shakshuka

2 free-range eggs

80g ripe cherry tomatoes

75g cottage cheese

2 sprigs of fresh dill

za’atar, to serve

Method

  1. Heat the Aubergine Shakshuka in a 24cm non-stick frying pan according to packet instructions. Once bubbling, crack in the eggs, then cover and cook to your liking (about 5 minutes for cooked whites).
  2. Meanwhile, quarter the cherry tomatoes.
  3. Spoon the shakshuka into a Big Love Dishy Bowl, sprinkle over the tomatoes and dot over the cottage cheese, then pick over the dill and finish with a little za’atar, if you like.
