makes 450g

Ingredients

1 large sweet potato (300g)

200g quality minced beef

2 tablespoons ricotta cheese

extra virgin olive oil

optional: 2 sprigs of fresh thyme

Method

  1. Peel and cut the sweet potato into 1cm chunks.
  2. Place a pan over a medium heat and fill with 2cm of water, then pop a steamer/colander on top. Place the beef and sweet potato into the steamer, cover with a lid and steam for 10 to 15 minutes, or until cooked through.
  3. Transfer the mince and sweet potato to a blender (use a hand-held stick blender, if you prefer) or bowl.
  4. Add the ricotta and a small drizzle of oil, then either blend to a puree, pulse, mash and/or finely chop depending on the stage your little one is at. (for more information on stages of complementary feeding, click here). If it’s a bit too thick, add a little water to loosen. Pick over the thyme before serving (if using).
