Ingredients

a handful of good red and green grapes, halved and deseeded

1 tablespoon pine nuts

a small handful of fresh rosemary, leaves picked

2 tablespoons vanilla sugar

1 tablespoon white wine

1 heaped tablespoon crumbly ricotta

extra virgin olive oil

Method

It might sound bonkers, but pizza toppings with a touch of sweetness make a great pudding!

  1. This might sound odd but it's totally delicious for breakfast or dessert. Especially with a ball of vanilla ice-cream – great!
  2. Recipe for pizza dough can be found here.
  3. In a bowl mix together the grapes, pine nuts, rosemary, sugar and white wine and allow to sit for a few minutes. Then scatter, with the juice, all over the pizza base. Crumble over little pieces of ricotta and drizzle with a little extra virgin olive oil. Cook until crisp and golden.
