150g regular, black or red quinoa
1 fresh yellow or green chilli
2 yellow peppers
4 spring onions
1 clove of garlic
2 tablespoons cider vinegar
olive oil
2 x 120g free-range skinless chicken breasts
4 sprigs of fresh thyme
½ a ripe avocado
2 sprigs of fresh coriander
optional: natural yoghurt
