This is nothing to do with the Duke of Hamilton. It’s a scrumptious recipe that my handsome art director Johnny Boy Hamilton cooks for his lovely wife. Lucky woman. There is something quite cute about the individual chicken thing, and cooking the potatoes in the cavities seems to make them taste even better.
Recipe From
450g potatoes, peeled and quartered
4 poussin chickens
1 handful of fresh sage, thyme or rosemary
olive oil
12 cloves of garlic
12 rashers of dry-cured smoked streaky bacon, thinly sliced
1 glass of white wine
optional: double cream
