Chicken gives us selenium, which we need for lots of functions, from making sure our immune systems are ticking over nicely to keeping our hair and nails strong and healthy.
Recipe From
1 x 1.8kg whole chicken
2 fresh bay leaves
1 bunch of fresh flat-leaf parsley (30g)
1 leek
1 carrot
1 stick of celery
1 onion
extra virgin olive oil
Once completely cool, cover and pop into the fridge for up to 3 days, ready to be used in salads, sandwiches and stir-fries.
