plain flour, for dusting

1 x 375g packet of all-butter puff pastry (cold)

1 large free-range egg

2 tablespoons sesame seeds

1kg mixed mushrooms, such as shiitake, oyster, chestnut, enoki

olive oil

2 cloves of garlic

150ml white wine

1 tablespoon wholegrain mustard

40ml single cream

1 bunch of fresh flat-leaf parsley (30g)

15g Gruyère cheese

truffle oil
