1 × basic risotto recipe (see page 134), minus the vermouth or white wine

3 wine glasses of your favourite full-bodied red wine

10 rashers of smoked streaky bacon, finely sliced

olive oil

2 heads of radicchio, trimmed and finely sliced

1 handful of fresh rosemary, leaves picked

1 small knob of unsalted butter
