About the recipe

This is one of those fabulous, comforting dinners that really takes very little time to put together, and uses leftover pork to great effect. You just whack it all into the oven and let time work its magic. This is a really good method for a baked risotto, and very low maintenance, and the two dishes eat ridiculously well together.

2 large mixed-colour peppers

olive oil

1 onion

2 ripe tomatoes

½ a bunch of fresh flat-leaf parsley (15g)

2 tablespoons red wine vinegar

200g leftover cooked pork

300g risotto rice

1 vegetable stock cube

1 knob of unsalted butter

50g Parmesan cheese
