Ingredients

50g unsalted butter

10-12 cloves

1 orange

1 litre unsweetened cloudy apple juice

500ml white rum

250ml apricot brandy or Cointreau

1 whole nutmeg, for grating (optional)

Method

The ultimate winter cocktail, this will warm you up instantly after a day outside.

  1. Place the butter in a saucepan over a low heat, add the cloves and use a speed-peeler to strip in the peel of the orange.
  2. When it begins to foam, add the apple juice, squeeze in the orange juice then pour in the rum and apricot brandy (or Cointreau).
  3. Bring to a simmer, then turn off the heat and decant into mugs or toddy glasses, discarding the orange peel, if you like. Finish with a grating of nutmeg, if using.
