About the recipe

I was having a bit of a fun when I made up this salad, and wasn't sure if I was in Greece or Morocco, but ultimately, the principle of a beautifully dressed salad with different textures and colours is always the same, regardless of the country you take it to. I'm a sucker for a crouton, so I wanted to try something different with pitta here. I have to say, this mutt of a salad is very tasty and the sweet and savoury sesame feta fritters are damn good.

Ingredients

1 mug (320g) of couscous

2 pitta breads

olive oil

½ a cucumber

1 red onion

1 large carrot

100g cooked or raw beetroot

100g feta cheese

1 large free-range egg

3 heaped tablespoons self-raising flour

1 heaped tablespoon sesame seeds

runny honey

2 tablespoons red wine vinegar

4 tablespoons extra virgin olive oil

1 teaspoon dried oregano
