2 tablespoons caster sugar
4 x 150g salmon fillets, skin on, from sustainable sources

200g fine green beans

1 tablespoon black or white (toasted) sesame seeds
CITRUS DRESSING
2 small shallots
(3 tablespoons) 1 yuzu or grapefruit
(1 tablespoon) 3cm piece of ginger
1 orange
1 lime
