Each veg combo here guarantees we get all of our 5-a-day portions from just one serving – what a lovely bowlful. Used minimally for seasoning, Parmesan is a good calcium source.

BASE RECIPE
2 onions
2 large carrots
2 sticks of celery
olive oil
2 fresh bay leaves
optional: 1 rasher of higher-welfare smoked streaky bacon
2 litres organic veg or chicken stock
1 x 400g tin of cannellini beans
½ a Savoy or spring cabbage
150g dried spaghetti or fregola
60g Parmesan cheese
extra virgin olive oil
4 slices of wholemeal bread
Choose your SEASONAL VEG combo: you want 750g of extra veg in total, so how you divvy that up is your choice
