Ingredients

2 litres organic chicken stock

300g brown rice

olive oil

250g lean minced lamb

1 heaped teaspoon curry powder

2 cloves of garlic

6cm piece of ginger

1 bunch of fresh coriander (30g)

2 onions

2 carrots

2 mixed-colour peppers

150g red split lentils

1 x 400g tin of chickpeas

1 x 400g tin of plum tomatoes

150g frozen peas

80g frozen chopped spinach

6 uncooked poppadoms

6 tablespoons natural yoghurt

Top Tip

Make this dish veggie by swapping out the lamb for an equal amount of chopped mushrooms, and switching to veg stock.
