Ingredients

4 tablespoons tzatziki

½ a bunch of fresh mint (15g)

1 bulb of fennel

80g rocket

extra virgin olive oil

1 lemon

1 x 250g pouch of Jamie Oliver Mega Med Grains

1 x 220g jar of tuna fillets in oil, from sustainable sources

Method

  1. Place the tzatziki in a food processor with most of the mint and blitz until smooth.
  2. Trim the fennel, pick and reserve any nice fronds, then halve the bulb and very finely slice it on a board, or use a speed peeler or mandolin (use the guard!) to shave it. Add the rocket and 1 tablespoon of oil, grate over the lemon zest and squeeze over its juice, then season with sea salt and black pepper, and toss to combine.
  3. Use the back of a spoon to spread the tzatziki dressing across the bottom of 2 Big Love Dishy Bowls. Divide the Mega Med Grains, fennel and rocket salad, and tuna between the bowls, then pick over the reserved mint leaves and sprinkle over the reserved fennel fronds, if you have any.
