I know that fennel isn’t classically associated with Christmas dinner, but this dish is absolutely delicious, so please give it a try. And if all of it doesn't get eaten, then it’s just as incredible the next day.

4 bulbs of fennel
2 lemons
olive oil
4 cloves of garlic
½ a bunch of fresh thyme
1 large onion
4 quality anchovy fillets
4 teaspoons dried rosemary
2 x 400g tins of plum tomatoes
100g Lincolnshire Poacher or sharp Cheddar cheese
2 handfuls of fresh breadcrumbs
red Leicester cheese, for grating
