EASY 1-MINUTE SAUCES

Adding an injection of flavour doesn’t need to be complicated or time-consuming. Give these brilliantly simple 1-minute sauce recipes a try for an instant tasty kick:

FRESH MINT SAUCE: pick and very finely chop 1 bunch of fresh mint, place in a bowl with a pinch of sea salt and 2 teaspoons of caster sugar, then just cover with boiling water. Stir in 4 tablespoons of white wine vinegar and mix well.

HORSERADISH SAUCE: mix 2 tablespoons of natural yoghurt with 1 tablespoon of grated horseradish, season to taste with lemon juice, sea salt and black pepper, and finish with a splash of extra virgin olive oil.
