Fish suppers for Easter

March 24, 2016 • In Fish

For many people, swapping meat for fish on Good Friday is part of the Easter tradition. If you’re one of them, we’ve got lots of ideas to help you make a delicious dinner, no matter what kind of fish you’re after – be it smoked, baked or grilled; salmon, cod or sole.

By choosing fish – which is a great source of protein – you’re giving your body many different vitamins and minerals. And aiming to get at least one portion of oily fish every week means you’ll be getting a great source of omega-3 fatty acids, too. So there’s no better reason to big-up fish this Easter!

Whether you’re going all out with a proper showstopper, opting for something special that can still save you time, or want to keep things simple with a trusty traybake, we’ve got an Easter fish recipe for you. Try to make use of your local fishmonger, if you’re lucky enough to have one nearby. They’re likely to have cuts of fish that you might not find at the supermarket.

From whole poached salmon and rhubarb and delicate lemon sole (in a wicked Mediterranean-inspired traybake), to green tea-rubbed salmon with mango salad, air-fryer salmon, potatoes and asparagus and upside down fish pie, we hope you will find your new favourite fish recipes for Easter! Enjoy.

ELEGANT EASTER MAINS

Poached whole salmon is a super-special centrepiece that you can take a lot of love and care over. You’ll need a large roasting tin or fish kettle big enough to hold a whole salmon and enough hob space for it to stand across two hobs. Jamie’s version is pretty in pink; served with pickled red onions, a fruity rhubarb sauce and homemade tarragon mayo.

If you’re after tried and tested flavours that will satisfy your family and friends this Easter, give this roasted cod recipe a go. Here, this popular fish is simply roasted with pancetta and served with a sweet pea and potato mash – it feels a bit posh, but it’s still super-simple to put together.

For a super-fresh and impressive Easter main for two, why not give Jamie’s green tea-rubbed salmon tail a try? While it’s roasting, you can have some fun preparing the salad, which includes mixed-coloured baby carrots, cucumber, tomatoes, chicory, chilli, cress, mango, lime and soy sauce.

Get inspired by how Jamie prepares his veg – lots of fun ways to make this a beautiful, vibrant dish.

Fancy a Spanish vibe this Easter? Try this impressive cod dish using Spanish-inspired ingredients: a large loin of cod is wrapped in jamón ibérico ham, with red peppers, smoked paprika and a clever use of breadcrumbs that’s typical of Spanish cooking. We love how the borlotti beans bring an extra dimension and level of comfort, too.

Evoke the flavours of The Mediterranean this Easter with this simple yet elegant recipe. Think tomato sauce studded with olives, capers, garlic and chilli; gently baked with a white fish of your choice on top. It’s also dairy-free and gluten-free, which is great if you have any guests with dietary requirements.

PERFECT PIES & PASTRIES

Looking for a super-fun Easter recipe? This fishy little fella is guaranteed to bring a little joy to your table. Succulent sea bass and juicy prawns are dressed up in a brilliant golden casing, and served with a vibrant salsa verde. Super-cute!

Presenting your loved ones with a golden salmon en croûte is a hard one to beat. This next-level pastry recipe goes all-out with Old Winchester – a Gouda-style cheese – wild mushrooms and asparagus on top. It’s fancy!

We love Jamie’s clever one-pan fish pie. The motto of this one is assemble and go – giving you more time to enjoy with your family and friends. Filo is the pastry hero, with couscous on the base to prevent a soggy bottom, layered with prawns, salmon, cherry tomatoes, flavoured with fish’s best mates dill and lemon.

TIME-SAVING MAINS

Want a fantastic one-pan wonder centrepiece for your Easter spread? This is a fish pie, but not as you know it! Try Jamie’s fresh take that turns everything on its head: upside down with a crispy potato base!

Want a quick and tasty fish recipe for Easter? Get ahead by bagging up portions of this red pepper, almond and chorizo sauce with delicious fillets of salmon, so you can pop in the oven as and when you need them. Great for kids and adults alike.

Getting together with family and friends over the Easter holidays can often mean getting food on the table quickly. We love the simplicity of this baked pollock; straightforward to put together, but looks a treat. It’s easy to scale up if you’re feeling a crowd, too.

Need simple fare over the Easter holidays? Try Jamie’s air-fryer salmon recipe. Lots of lovely spring veg and our favourite fish – c’mon!

TRUSTY TRAYBAKES

Fancy a traybake that is fine-dining worthy? Lemon sole is one of the most delicate and special fish to cook and eat, so give this Mediterranean-inspired recipe a go this Easter. Delicious.

A little prep goes a long way with this traybake, making this an Easter-worthy lunch or dinner. Potatoes, green beans, cherry tomatoes and olives join together to bring a riot of colour and joy to your celebrations. And the basil and mustard yoghurt brings it all together.

There’s a lot going on in this traybake. Parmesan, crème fraîche and tiny prawns are stuffed into salmon fillets, then topped with pancetta and rosemary, all on a bed of lovely wilted garlicky spinach. A winning fish recipe for Easter.
