Great British Bake Off: pastry week

October 15, 2019 • In Baking

Ah, pastry week; the gusto, the panic, the endless soggy bottoms… Here are our favourite pastry recipes to get you into the spirit for tonight's episode.

Pastry can lend itself to a variety of recipes, both sweet and savoury, and the many different varieties of it give, well, great variety in these dishes. Below are our favourite pastry recipes from across the board to get you into the spirit for tonight. If all goes to plan, we'll be snacking on homemade jam tarts by the time Paul spots the first soggy bottom.

Basic sweet pastry

It’s important to get the basics right, and this basic recipe for sweet pastry from Jamie’s America is straightforward, versatile, and delicious.

Puff pastry

Homemade puff pastry is a bit of a weekend project, but it's super-impressive and super-delicious to make from scratch. Once you've cracked the process, you'll be star baker every week.

Pasties

Cornish pasties are a national treasure. We've got a few versions available on this site (some more traditional than others), and although none of them can claim to be authentically Cornish, they're all delicious. The newest addition to our pasty gang is the veggie one from Jamie's new book – give it a whirl!

Wellingtons

Wellington is another fantastic savoury use for pastry. If you’ve never tried it, you’re missing out. Jamie’s turkey wellington is a total treat, but fear not - we’ve got a killer vegetarian Wellington recipe right here.

Jam tarts

Jam tarts are a team-time shortcrust pastry classic, and a brilliant thing to make with kids as they’re super easy and delightful to look at. Sure, summer’s sort of come to a close, but think of these as a warm-up to mince pies in a couple of months.

Chocolate tart

We reckon this chocolate tart recipe is one of the most delicious, seductive recipes on our whole site. Honestly - just look at that thing. The subtler, sharper flavours of cardamom and raspberry are held up by a punchy 70% dark chocolate.
