Ingredients

1 x 250g pouch of Jamie Oliver Smoky Chipotle Chilli

½ a small ripe avocado

2 spring onions

80g ripe cherry tomatoes

10g fresh coriander

40g tinned sweetcorn

½ a lime

extra virgin olive oil

20g tortilla chips

Dishy Bowls

Method

  1. Heat the Smoky Chipotle Chilli according to packet instructions.
  2. Meanwhile, halve and destone the avocado, then scoop out the flesh and finely slice on a board.
  3. Trim and finely slice the spring onions, quarter the tomatoes and roughly chop most of the coriander (stalks and all), reserving a few nice leaves for garnish. Scrape into a bowl with the sweetcorn, then squeeze over the lime juice, add 1 tablespoon of oil, season with sea salt and black pepper, and toss to combine.
  4. Spoon the chilli into a Big Love Dishy Bowl, add the corn salsa, avo and tortilla chips, and sprinkle over the reserved coriander leaves.
