Ingredients

1 large free-range egg

75ml milk

½ teaspoon vanilla bean paste

1 pinch of ground cinnamon

2 slices of good-quality bread

1 tablespoon unsalted butter

4 teaspoons light brown sugar

Greek yoghurt, to serve

½ a batch of macerated blackberries

runny honey, to serve

Method

  1. Crack the egg into a large, shallow bowl. Add the milk, vanilla bean paste and cinnamon, and beat with a fork to fully combine.
  2. Place the slices of bread in the egg mixture, turning to coat both sides, then set aside for a couple of minutes to absorb.
  3. Melt the butter in a large non-stick frying pan over a medium heat. Sprinkle the bread slices with half the sugar and place in the pan, sugar side down. Sprinkle the top with the remaining sugar and cook for 4 minutes, or until golden brown, turning halfway through.
  4. Transfer the slices to plates, top with yoghurt and macerated blackberries, and drizzle with honey to serve.
