This is a great salad that can get away with being part of an antipasti selection as well as a main course salad or sandwich filling. Simple flavours again: it’s all based around the milky soft mozzarella and the slightly more refined heat of the grilled chilli. If possible try to buy buffalo mozzarella, as it’s made out of buffalo milk which makes the cheese far more tasty and delicate in both texture and taste. The salad doesn’t work nearly as well with that chewy horrible stuff that is used on pizzas.
