This roasted chicken is really tasty. The principle is very similar to the perfect roast chicken recipe in my first book, getting fantastic flavours right into the bird.
Recipe From
1.8kg chicken
1 large lemon
8 slices of prosciutto or Parma ham, thinly sliced
1–2 cloves of garlic, peeled and finely chopped
2 good handfuls of fresh thyme, leaves picked and finely chopped
100g unsalted butter (at room temperature)
1kg potatoes, peeled and cut into chunks
1 large celeriac, peeled
