This is my ultimate roast chicken. The secret to juiciness, flavour and quick cooking is putting a whole hot pricked lemon that’s been parboiling with the spuds into the cavity, and letting that help the chicken cook from the inside while it roasts on the outside. I’ve also given you rock solid recipes for gravy and accompaniments.

1kg potatoes
1 lemon
4 sprigs of fresh rosemary1 x 1.8kg whole free-range chicken
olive oil
500g carrots
1 onion
2 knobs of unsalted butter
1 orange
2 sprigs of fresh thyme
2 cloves of garlic
1 heaped tablespoon plain flour
½ a Savoy cabbage
250g frozen peas
