  4 x 250g higher-welfare pork chops, with rind
1 red onion
1 fresh red chilli
2 peaches
olive oil
1 lemon
1 bunch of fresh mint (30g)
2 leeks
2 zucchini
2 mixed-colour capsicums
1 bunch of fresh parsley (30g)
150g feta cheese
200g couscous
extra virgin olive oil
