Recipe From
2.5kg Maris Piper potatoes
extra virgin olive oil
4 red onions
4 cloves of garlic
200ml cheap balsamic vinegar
50g unsalted butter
½ a bunch of fresh thyme (15g)
35g rocket
FLAVOUR BOOST
I sometimes like to add a squeeze of lemon juice just before serving for an extra hit of freshness.
