As well as giving us a nice hit of vitamin C, sweet potatoes also provide us with manganese, which we need to keep all the bones and connective tissue in our bodies strong and healthy.
Recipe From
1 large red onion
2 cloves of garlic
2 mixed-colour peppers
500g potatoes
500g sweet potatoes
1 fresh red chilli
2 free-range skinless, boneless chicken thighs
olive oil
1 pinch of cumin seeds
1 teaspoon coriander seeds
2 whole cloves
1.5 litres organic veg or chicken stock
2 corn on the cob
2 limes
150g quinoa
1 bunch of fresh coriander (30g)
80g feta cheese
