As Easter signals the start of spring, it’s the perfect time to start switching to healthier, lighter and fresher meals. With that in mind, we’ve pulled together eight nutritious twists on the classics to inspire you.

This one-pan wonder is a real family favourite that turns fish pie on its head (literally) for a twist on a British classic. Using mashed potato as the base gives a gorgeous crispiness, but the best part? It’s just as good for you as it is tasty!

Celebrate in-season asparagus with this beautiful pasta dish. Super simple with finely sliced garlic, dried chilli and tangy pecorino, it’s on the table in 15 minutes for a real winner of a dinner.

Marinated chunks of lamb, sweet red peppers and bay, piled onto skewers and grilled until charred, this is a great recipe for sharing. Mix up the veggies if you like, swapping in wedges of red onion, broccoli florets or chunks of aubergine.

Embrace spring with this Mediterranean-style roast. Once the chicken is cooked, remove it to a board to rest, then top up the roasting tray with hot water, scraping up all that lovely sticky goodness. Stir in paprika and roasted red peppers, then use it to cook the couscous – you’ll end up with the most flavour-packed results. Delicious and good for you, too!
