A childhood favourite gets a grown-up upgrade in this easy fro-yo recipe. The addition of a bay sugar makes this really exciting and different, but you could absolutely sub it out for your favourite topping. Yum!

Ingredients

500g frozen blackberries

500g Greek yoghurt

runny honey, to taste

6 fresh bay leaves

2 tablespoons caster sugar

Method

  1. Before you start, pop a freezer-proof container and 6 serving glasses into the freezer ready for later – this way, your fro-yo won’t melt as soon as it’s spooned into them!
  2. Blitz the blackberries and yoghurt in a food processor until smooth. Taste and add a little honey if needed.
  3. Transfer the mixture to the container, cover and return to the freezer to firm up for 3 to 4 hours, stirring every hour.
  4. Pick the stems off the bay leaves, add the leaves to a pestle and mortar with the sugar, then bash and muddle together to form a dark-green sugar.
  5. Scoop the fro-yo into the prepared glasses, sprinkle over the bay sugar and get stuck in!
