doughnut recipe

hiya guys

We're freezin cold and fancy hot chocolate and doughnuts, but cannot find a recipe anywhere.  Does anyone have a foolproof (I wish) receipe, that we could use please.

Apple Cider Doughnuts

1 cup apple cider
1 cup granulated sugar
1/4 cup solid vegetable shortening
2 large eggs
1/2 cup buttermilk
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
Vegetable oil or shortening (for frying)

2 cup confectioners sugar
1/4 cup apple cider

Boil apple cider in small saucepan until it is reduced to 1/4 cup, 8 to 10 minutes; cool.

Beat sugar with shortening until smooth. Add eggs and mix well, then add buttermilk and reduced cider. Stir together flour, baking powder, baking soda, cinnamon, salt and nutmeg in another bowl. Add to liquid ingredients; mix just enough to combine.

Transfer dough to lightly floured board and pat to 1/2-inch thickness. Cut with 2 1/2- to 3-inch doughnut cutter; reserve doughnut holes and re-roll and cut scraps.

Add enough oil or shortening to fill a deep pan 3 inches; heat to 375 degrees F. Fry several doughnuts at a time, turning once or twice, until browned and cooked through, about 4 minutes. Remove to paper towels with slotted spoon.

For glaze, mix confectioners sugar and cider. Dip doughnuts while warm; serve warm.

Baked Doughnuts

2 packages yeast
1/4 cup warm water
1 1/2 cups scalded, cooled milk
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon nutmeg
1/4 teaspoon cinnamon
2 eggs
1/3 cup shortening
4 1/2 cups all-purpose flour
1/4 cup melted margarine
Cinnamon sugar (for topping)

In large bowl, dissolve yeast in warm water. Add milk, next six ingredients and 2 cups of the flour. Blend for 30 seconds, scraping the bowl constantly.Beat 2 minutes at medium speed. Stir in remaining flour until smooth. Cover and let rise until double in size, about 1 hour.

Turn dough onto a well-floured board. Roll dough around to coat with flour. (Dough will be soft.) Cut with floured doughnut cutter or cans. Lift carefully with spatula and place 2 inches apart on greased baking sheet. Brush with melted margarine. Cover and let rise until doubled (about 20 minutes).

Bake 8 to 10 minutes at 425 degrees F or until golden.

Immediately brush with melted margarine and shake in cinnamon sugar

Coconut Cake Doughnuts
2 eggs
1/2 cup granulated sugar
1/4 cup milk
2 tablespoons melted shortening or vegetable oil
2 1/3 cups sifted all-purpose flour
1/2 teaspoon salt
1/2 cup flaked coconut

Beat eggs with sugar until light; add milk and cook shortening. Add sifted dry ingredients and coconut; stir just until blended. Chill several hours.

Roll out on lightly floured surface to 1/2-inch thick. Cut out doughnuts with doughnut cutter. Fry in deep hot fat (375 degrees F) until brown; turn and brown other side (about 1 minute per side). Drain on paper towel. Sprinkle with confectioners sugar.

Hi Ali

Try this:

3/4 c sugar
2 T butter
3 c cake flour
3 t baking powder
1/2 t. salt
1/4 t ground cinnamon
1/4 t grated nutmeg
1 c milk

Cream butter and sugar.
Sift together dry ingredients.
Add to the butter mixture, alternatively with the milk.
Mix well and roll out to 6 mm thickness on a floured board.
Cut with a large round biscuit cutter, then remove the centre with a smaller one to make a ring.
Leave the rings for 10 to 15 min. before frying.
Fry in deep, hot fat at 370 deg. F. Brown on one side, turn with a fork and brown on the other side. Turn once only.
Remove from fat, drain on brown paper and roll in caster sugar or in a cinnamon-and-sugar mixture.
Serve hot. Makes 20 to 25 doughnuts.
