dips and appetisers.......

Hi Guys,

We love to entertain.... and often fall back to our Aussie tradition of the BBQ....

but to make it a bit special we like to start off with an entree or appetiser or dip... and finish off with a desert...

I have found an olive dip which is really yummy but is full of salt.. it sometimes tastes like they have added salt on top of the saltiness of the olives as well......  Does anyone have a yummy olive dip that you can make without addding salt... I was think mayo of some sort, garlic.....?????

Does any people have any other ideas and suggestions to post here?

I had a time when I always made middle eastern dips when entertaining. They were always very successful, even so that people are disappointed when I'm not serving them (I feel I need to expand my specialities, but my friends disagree). Here are the recipes, hope you like them!

Hummus

1 can drained chickpeas (±200 gr)
1 garlic clove, sliced
1 tomato
1 tbsp  olive oil
1/2 tsp ground cumin
pinch paprika
2 tsp lemon juice
1/2 tsp chilli powder
1 tbsp tahini (optional)
1 tbsp fresh cilantro (optional)
s & p

Blend everything in a food-processor into a smooth paste, sprinkle with some paprika or cilantro.

Baba Ganoush

1 large eggplant
1 garlic clove, sliced
1 tbsp olive oil
s & p
1 tbsp tahini (optional)

Pinch the eggplant a few times with a fork, (tip from Anna on the forums here, she had one that exploded) then bake in a medium oven (180 C)
for about 50 minutes.
Leave to cool for a few minutes, then peel off the skin. Blend the flesh with the other ingredients, except the garlic. Add this ad the end, and leave for 30 minutes. Remove before serving.

Egyptian Ful

1 can brown fava beans, drained and washed
1 tomato, cut in small pieces
1 tbsp ground cumin
2 tbsp tahini
3 spring onions, sliced thinly
1/2 cucumber, cut in small pieces
s & p
olive oil

Mash the beans slightly with a fork. Heat some oil in a skillet and fry the beans with halve the cumin. When heated through, transfer to a bowl and thoroughly mix in the tahini and remaining cumin. Add the veggies, some s & p to taste and some more olive oil, stir and serve while still warm.

Muhamarra

1 red bell pepper, roasted and peeled
1/2 slice old bread, toasted and crumbled
a pinch chilli powder
a pinch ground cumin
1 handful walnuts
1/2 tbsp lemon juice
1 tbsp pomegranate molasses
s & p

Blend everything in a foodprocessor.

Chili-Olive Dip     

Ingredients :

1/4    cup    Mayonnaise
4    oz    Chopped Green Chiles
1/2    cup    Drained Green Olives
1    cup    Sour Cream
1/2    tsp    Salt
1/2    tsp    Chili Powder
1 clove garlic crushed

    Method :

     Place mayonnaise, chiles, garlic  and olives in the container of an electric blender; cover and whirl until smooth.
     Spoon sour cream into a small bowl and stir in mayonnaise mixture, salt, and chili powder until well blended.
     Cover; refrigerate about 1 hour.

Green Olive Dip

Ingredients:
1 package (8 oz. size) cream cheese
1 jar green olives
1/2 pint whipping cream
1 tablespoon salad dressing
Garlic salt

Directions:

Whip cream and set aside. Beat cream cheese, then add whipped cream and salad dressing. Fold in olives and sprinkle garlic salt to taste. Serve with crackers.

Artichoke Cheese Dip

INGREDIENTS:
1 cup mayonnaise
1 cup grated Parmesan cheese
1 can (14 ounces) artichoke hearts, drained and chopped
dash garlic powder
2 tablespoons finely chopped green onion
1 to 2 tablespoons chopped ripe tomato
PREPARATION:
Combine mayonnaise, Parmesan cheese, artichokes, and garlic powder; blend well. Spread mixture in a 9-inch pie plate. Bake at 350° for about 25 minutes, or until lightly browned. Garnish with the green onion and chopped tomato.
Serve with assorted crackers or tortilla chips.

Avocado Dip

INGREDIENTS:
2 large ripe avocados, peeled and pitted
16 ounces sour cream
2 tomatoes, cored, seeds removed, coarsely chopped
4 green onions, with green, coarsely chopped
4 teaspoons lemon juice
a few drops of hot pepper sauce, such as Tabasco
PREPARATION:
Cut avocado into chunks; place in food processor with sour cream, tomato, green onion, lemon juice, and hot pepper sauce. Pulse until smooth. Cover and refrigerate for an hour to chill. Serve with vegetable dippers.

Amber, I think it was just mayo, salt, garlic, and then it said 55% olives but I didn't have a recipe for it. I was wanting to replicate it at home or have something similar without the addition of salt. I really like shammoks chilli olive dip and also venus recipe that she has just posted. We are also into avacado and eat it always. We are hoping to grow an avacado tree in our garden when we start esbablishing it. Other plants we hope to have are a mango tree and some strawberry Guava's as well as some other variaties.

We are wanting to plant a food producing garden with lots of fruit and vegetables as well as herbs and spices. Maybe that is a topic for a new thread question

I just wouldnt add the salt to the recipe, it wont change the flavour, just the saltiness.
