Skipped supper the last couple of nights (having had a really late lunch both days), but tonight I think I'll try and finish up the chicken I roasted on Sunday - maybe make a quick chicken curry with cauliflower rice ...

Penne puttanesca. Bacon chilli olives sundries toms chargrilled caps frizz's tomato sauce topped with evoo & Parmesan.

I'm about to make chicken breast cooked in the grill pan with sumac. Served with cous cous and toasted almonds, chilli, scallions and a smidge of finely diced preserved lemon. Steamed baby spinach on the side. A garden salad to follow.
Dessert? A piece of fruit.

It was! I bought some wild Coho salmon and used nectarines and peaches instead of mango... they are still in season... was yummy!

A fish fillet basted with red curry paste and sesame oil served with sesame oil and sesame seed and ginger rice vermicelli noodles and Asian veg. Fruit for dessert.
