Hello all. It's been some time.

We are Sun-Fri eating slow carb at the moment. It's not hard as we like beans & lentils etc.

Tonight is white chilli - chicken & white bean chilli. Avocado salsa on top.

Tomorrow is our go wild day so there will be burgers for lunch & a roast dinner with crispy potatoes, pumpkin & corn.

And dessert.

grilled tri tip steak, shrimp fettuccine alfredo, tomato feta bruschetta. molten lava cakes.

  we ended up not doing the grilled ceasar salad .

Chilli Con Carne made out of leftover bolognaise sauce. I add chilli powder, ground cumin, a tin of kidney beans, some water and simmer.  I know its not authentic but served with corn chips, hot sauce, sour cream etc it's quite good.  wink  wink

How about some delicious pasta chicken carbonara?
Instead of the bacon I used smoked chicken and it was superb!

Reaping the benefits of having a good cajun family. I'm having rabbit cooked with onions and turnips. It smells so good. Can't wait to eat!!
