Garlic turning blue
My friend, Keilah, asked me I'd ever seen garlic turn "day glow blue" while cooking it. I can't say I have, but was wondering if anyone here has?
Any idea what may cause the garlic to turn birght blue?
Would it the the oil or temperature its cooked it? Apparantly its happened a couple of times, either while cooking in a wok or boiling while making a stew.
Ideas?

Interesting! I had never heard of that. I just knew that trout can turn blue (it's a on many menus in Germany - it's usually a poached rainbow trout. The acid makes the slippery stuff on the surface of the fish turn blue)

i have seen it turn a green/blue colour a couple of times.. if you add lemon juice to fresh minced garlic and leave it for awhile it will sometimes this. A friend of mine had alot of garlic and thought they would make up a whole jar of minced garlic to save some prep. time thoughout the week.. When we visited them she brought out this jar of green minced garlic to ask me what the hell had happened lol. She had added some lemon juice to keep the minced garlic from going brown , instead it went green ![]()

Yeah, just mince a clove and squeeze in a bit of lemon, leave it a few mins and bingo, Green/Blue garlic. ![]()

Yes - this has happened to me when trying to make sweet chilli sauce which involved cooking garlic in vingear and the garlic turned bright blue!!
I think it is something to do with the sulphuric compounds in the garlic interacting with copper in the vinegar to produce copper sulphate. Apparently its harmless, but I didn't eat it - it looked quite off putting!
