Hiya Im new and also need to ask a question!
Hi Guys!
Right ive got a stew pack of veg in the fridge...dont wanna use meat as I cant afford it lol....Obviously I can do a veg soup or stew but anyone got any other ideas to spice it up a bit or something different? please help?

well I got garlic,lemon grass,mushrooms etc....and other stuff that I dont think will go but if you ask me something like if I got it or can get it maybe I can work from there?

Vegetable Soup
INGREDIENTS
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium sized onion
2 each carrot
1 handfull green beans
8 each button mushrooms
4 cups chicken stock
3 cups water
6 each potato
salt and pepper
1/4 cup parsley
PREP WORK
chop up the onion, slice the carrots into 1/4 inch thick pieces, trim and halve the green beens. Slice the mushrooms into 1/4 inch pieces, chop the potatoes into 1/8's or 1/4's depending on their size and chop the parsley. Now you are ready to put it all together.
Heat butter and oil on medium high in a soup pot. Sauté onion, carrot, green beans for 3-4 minutes.
Add mushrooms and cook for another 2 minutes. Add chicken stock and water, potatoes, and season with salt & pepper.
Bring to a boil, cover, reduce heat and cook at a gentle boil until the potatoes are tender. (approx. 15 minutes) Add parsley just before the potatoes are cooked.
Season to taste and serve.

Autumn Vegetable Stew
Ingredients :
1 tbl oil
1 tbl butter
1 lrg onion
2 lrg carrots
1 sm broccoli head
1 lrg zucchini
3 x garlic cloves
3 tbl flour
1 pkt sliced mushrooms - (6 oz)
1/2 tsp dried thyme
1 1/2 cup vegetable broth
Salt to taste
Freshly-ground black pepper to taste
2 tbl chopped parsley
BROWN BASMATI RICE
2 cup water
1 cup brown basmati rice
Salt to taste
Method :
Heat the oil and butter in a saucepan over medium heat. Chop the onion and add it to the pan. Cook, stirring occasionally, until the onion has softened, about 6 to 8 minutes.
While the onion cooks, peel and thinly slice the carrots, cut the broccoli into florets (if the florets are large, cut them in half), cut the zucchini in half lengthwise and then cut it in 1/2-inch slices. Mince the garlic.
Add the flour to the pan and cook, stirring, until it forms a paste, about 2 minutes. Add the carrots, broccoli, zucchini, garlic and mushrooms to the pan. Cook, stirring, about 3 to 4 minutes. Add the thyme, vegetable broth and salt and pepper to taste. Cook, stirring occasionally, until the vegetables are just tender and a gravy has formed, about 15 minutes. Serve over Brown Basmati Rice and garnish with the chopped parsley.
Brown Basmati Rice: Bring 2 cups of water to boil in a saucepan. Stir in 1 cup of brown basmati rice and salt to taste. Cover the pan, reduce the heat to low and cook until the rice is tender and all of the water has been absorbed, about 25 minutes.
This recipe yields 2 servings.

What is in a stew pack?? If the veggies are nice to be grilled, you could serve them with pasta and some pesto or tomato sauce?

what we get in asda or tesco's is:
Carrots, swede, parsnip and brown onion
