Salmon in White Wine with Roast Veg

Ingredients

Salmon Steak
White Wine
Shallots
Veg of your choosing
1 garlic clove
Olive Oil
5 cherry tomatoes
Salt
Double Cream
Lemon

Method

Preheat oven to gas mark 5

Peel the shallots

Prepare the veg and place in a roasting dish

Crush the garlic and sprinkle over the veg

Halve the tomatoes and press the flat sides in some salt

Add the tomatoes to the veg

Place the veg in the oven

Pour 2 glasses of wine and 2 tbsps double cream into a mixing bowl, add the juice of half a lemon and mix together.

Place the shallots in a medium roasting dish and place in the oven on the top shelf

When the shallots have been in the oven for 30 minutes, sprinkle some salt on the salmon, rub in some olive oil and whack it on a medium heat on a grillpan, turning occasionally

When the veg and shallots have been in for about 40 minutes, remove the shallots from the oven

Halve the shallots and transfer them back into the roasting dish with the white wine sauce and place the salmon in the centre

Cook in the centre of the oven for 10 minutes

Serve by pouring the sauce into a bowl, creating a circle of roasted veg, with an inner circle of shallots, and stick the salmon in the centre.
