Rocky Road Cake Recipe required

HelpDoes any have a recipe for Jigsaw cake also know as rocky road preferably without nuts.  Its a chiller cake with chocolate biscuit and marshmallows help

ROCKY ROAD CAKE   

2 c. all-purpose flour
2 c. sugar
4 tbsp. cocoa
1 tsp. soda
2 sticks butter
1/2 c. buttermilk
2 eggs
1 tbsp. vanilla

Sift dry ingredients together and then add butter, buttermilk, eggs and vanilla. Mix, blending well and then add 1 cup hot coffee. Pour batter into well greased 12 x 18 inch pan. Bake at 350 degrees for approximately 30 minutes. Frost immediately.

ROCKY ROAD FROSTING:

1 stick butter
6 tbsp. milk
1 box powdered sugar
4 tbsp. cocoa
2 tsp. vanilla

Blend and add 1 cup chopped pecans and 1 1/2 cups small marshmallows. Frost cake as soon as removed from oven.

Rocky road cake

¾ cup Flour
¾ cup Sugar
¼ cup Unsweetened cocoa powder
¼ teaspoon Salt
¾ cup Chopped pecans
½ cup Vegetable oil
2 large Eggs
2 cup Mini marshmallows

Heat oven to 350. Put flour, sugar, cocoa, salt & pecans into ungreased 8" square baking pan. Stir with fork until blended. Add oil & eggs; stir to mix well. With rubber spatula, scrape any ingredients clinging to sides, corners & bottom of pan into batter. Bake 15 minutes or until top feels firm. Sprinkle with marshmallows & return to oven. Bake 5 minutes longer or until marshmallows have softened. Cool in pan on rack; cut into 18 bars

Hi, I know that you asked for a cake recipe, I thought I would add this slice.  Has always been a winner around our place...  wink

Rocky road slice

Serves 8

500g good-quality milk cooking chocolate, broken into pieces
250g milk coffee biscuits, roughly chopped
100g marshmallows, chopped
100g red glace cherries, halved

1.  Grease a 3cm deep, 16.5cm x 26cm (base) slab pan.  Line base and sides with baking paper, allowing 2cm overhang at both ends.

2.  Place chocolate in a large, heatproof, microwave-safe bowl.  Microwave uncovered on Medium (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth.  Add biscuits, marshmallows and cherries.  Stir until well combined.

3.  Press slice mixture into prepared pan.  Refrigerate for 3 hours or until firm.  Cut into large pieces and serve.

Will keep for up to 2 weeks in the fridge.  Allow to come to room temperature before serving.
