Sweet Fried Salmon

I originally called this 'Fried Salmon with Onion and Tomato' but that's a dull name, and the marvellous sweet taste is lingering in my mouth, like the inspiration of a sunset to an artist.


2 Scottish smoked salmon fillets
1 large lemon
2 tsp Tarragon Wine vinegar
1 small handful curled parsley
1/2 small onion
2 beef tomatoes
Chinese Stir Fry Oil


Heat a small wok
Slice the onion and tomato
Add the onion, tomato and vinegar to the wok
Squeeze the lemon into the wok
Fry on a high heat until soft
Heat the oil in a medium wok
Place the salmon in and lightly sear both sides
Add the contents of the small wok
Cook on a medium heat for 10 minutes
Season with salt and seaweed
