Tropical Lamb


3 lamb steaks
1 mango
2 handfuls pineapple chunks
1 handful apricots
1 glass red wine
1 sweet red pepper
ΒΌ butternut squash
Long grain white rice
1 handful pecan nuts
1 handful sultanas
1 tbsp. extra virgin olive oil


Pre-heat oven to gas mark 4
Cut the squash and pepper into thin slices
Place in a small oven dish and drizzle with the oil

Cut the mango into chunks
Halve the apricots

Add some oil to a large wok
Heat the wok on full heat and add the lamb
Brown off the lamb and add the pineapple, mango and apricot
Transfer the lamb and fruit to a large oven dish
Place the lamb just above the middle of the oven
Cook for 1 hour

40 minutes from the end of cooking place the veg just below the middle of the oven

10 minutes from the end of cooking time bash the pecans into quarters
Boil the rice, stirring in the sultanas and pecans
Serve the rice into two dishes

Make a thin circle of pepper and squash round in the inner rim of each dish
Spoon the lamb and fruit in the centre
