Vegetarian Lemon Curry


6 small vine tomatoes
2 red sweet peppers
2 tsp mild Madras curry powder
2 tbsp dried curry leaves
2 lemons
A generous amount of Double Cream (I should really learn how to measure this!)
1 tsp cornflour
1 tbsp cold water
1/2 brown onion
1 glass white wine (Chardonnay)
2 cups long grain white rice
2 tbsp extra virgin olive oil


Slice the peppers and onion
Halve the tomatoes
Toss into a mixing bowl
Zest and juice the lemons into the bowl
Add the leaves, powder, wine and cream
Boil the rice as per normal (10 minutes simmering in boiling water)
While rice is boiling, heat the oil in a medium skillet
Add the curry mixture and cook on a medium heat till the tomatoes are soft
Mix the water and cornflour together
Add a little of the curry sauce and combine
Pour back into the curry and mix thoroughly
Serve into 2 bowls

I have found this in the unawnsered posts from 2007 !

Lemon curry , I like the sound of this . I have never eaten a lemon curry .

For me, there are however a couple of elements to the recipe that I might leave out , one being the glass of white wine, to me this sounds a bit strange in a curry.
The other thing I would leave out would be the cornflour as I dont mind a a runnier sauce in a curry and I dont really like the texture sauces that are thickened with cornflour.
I d like lemon with a curry and I could see this curry as an accompniment rather than a main dish.

Sounds interesting. I can't quite work out what it'd taste like. Not sweet and sour, as there's no sweet in there.
