Pesto anyone?

I just got my mortar and pestle in the mail, very jazzed. Same one Jamie uses and les than $50 US. Here the link if anyone cares, it’s the 8” one.

Any way I am dying to make some killer pesto. So... anyone got some pesto recipes for me to try out???

Boy were you ripped off, you could have gone to any Asian grocer and got one for 1/2 that price.

Pesto
a large bunch or two of basil leaves picked of stems
a good pinch salt
a small handfull of pine nuts
a squeeze lemon juice
1/2 clove garlic
Extra virgin Olive oil (EVOO)
a handful parmesan  - I prefer grana padano over reggiano.

Put a non stick pan on the heat and warm through the pine nuts (do not toast or brown them)

put the garlic and the salt in the mortar and bash until creamy. Add the basil leaves and a squeeze of lemon (about 1/2 to 1 teaspoon, not too much) and bash until the leaves are all crushed and mooshed up.

Add the pine nuts and bash until they have been incorporated into the basil.

Repeat with the parmesan Dont use too much.

Add Olive oil and stir in until the pesto is loosened and easily stirred without clumping.

I find that when making pesto, l taste it as I go along as sometimes I feel it will need more garlic, sometimes more salt, or oil !
once you are used to making pesto you will find that you just 'bung things in'  lol

Mummza - I can't remember quantities any longer as I just bung it all in now I have made it so often.

Easiest way to cook..bung it in..taste ..and adjust  thumbsup
