Butter and Peppercorn Sauce?

Hi all,

Just wondering how to make I butter and peppercorn sauce, naturally it's butter and peppercorns, but how finely do you grind the pepper? Are any herbs involved etc? What does it go with?

Hi Chris

If this is for something like a steak I would put a splash of wine in the pan that you fry the steak in after you have cooked it (pour the fat out first of course). Boil the wine down, take it off the heat and whisk in a little bit of butter and crushed up peppercorns.

Wow! Wasn't expecting a reply from the man himself!

I'm not sure what it's going to go with yet, it could be a Chicken dish, Chicken wrapped in either Bacon or Parma Ham to be specific.

Green Peppercorn Sauce
1 1/2 teaspoon butter
1 teaspoon crushed green peppercorns
1 teaspoon parsley, chopped
2 ounces  brandy or white wine

Melt 1 1/2 teaspoon butter in sauce pan (or use it to deglaze a pan), add remaining ingredients, and bring to boil being careful not ignite the brandy.
Serve  warm.

Hi All,

I hate to ask this and know I will probably get some stick for it!

When I have a steak I enjoy a peppercorn sauce (ok here goes) I like the Schwartz one! both the taste and consistency etc... however I would obviously like to be able to make my own rather than cheating!

Will any of the current recipe tips on this forum turn out similar, if not any tips would be most appreciated.

I'm not quite sure what you mean by 'simple'.  Chicken dhansak has lentils in, and it takes a bit of time for them to cook.  Also, as a curry recipe, it needs quite a few spices, that you may or may not have in your cupboards. 

I've just googled 'chicken dhansak recipe' and quite a few results come up.  The following ones might be the easiest of the ones I've looked at, though they're not necessarily the best:
