F.G. amazing, last time I had it, was from Clare Smyth at Gordon Ramsay
Pressed foie gras, smoked and confit duck,Pickled pears and Tasmanian Mountain pepper. stunning!
I recall Jason Atherton at Maze doing something knockout also smoked Eel and watercress were possibly involved. Good luck, I think the French are the ones to answer this one, some amazing Ideas allready
