Cod and avocado bake

Hi all,

Was intending to bake this tonight and can't find recipe anywhere (books are packed away at the moment and thought I had it somewhere but can't find it).

Can someone confirm (this is from memory!), grease the roasting tin, place cod in, avocado on top, then prawns and basil?

Pour over double cream and then grated cheese?

I wanted to do this just for the two of us.. please could someone check what amount I need of ingredients please.

I've found the recipe in "Happy Days with the Naked Chef".

Give me a few minutes and I'll post the recipe.

Hi, me again -

Jamie's recipe for Baked Cod with Avocado, Prawns, Cream and Cheese from his book "Happy Days with the Naked Chef" - serves 2.

extra virgin olive oil
sea salt and freshly ground black pepper
2 x 225gr/8oz cod fillets, skinned and pin-boned
1 small handful of fresh basil, ripped
1 avocado, peeled, stoned, halved and sliced
150gr/5 1/2oz good peeled prawns cooked or un-cooked
140ml/5fl.oz double cream
150gr/5 1/2oz good Cheddar cheese

Pre-heat the oven to 220C/425F/gas 7.

Rub a baking dish or roasting tray with a little olive oil, season the cod on both sides and place in the dish.  Sprinkle the fillets with the basil, avocado and prawns.  Drizzle over the cream and grate over the cheese.  Cook at the top of the pre-heated oven for 15 to 20 minutes until golven brown and bubbling.
Season to taste with sea salt and freshly ground black pepper and serve simply with a green salad.  Lovely jubbly.

Thats great thanks, can head off to the shops now... lets hope he likes it cos I loved it when I've had it before but never made it for him!
