Quiche variations

I think i have my pastry and custard down to fine art now, but i am tired of the same old fillings, please give me ideas of different ones

Some of our family favourites are courgette/zucchini and tarragon topped with parmesan, garlic mushroom, asparagus and smoked salmon, caramelised onion or a roasted red pepper and garlic.

I love bacon and kale with a salty pecorino, just make sure you don't salt the custard!

Im boring my fave is bacon, onion & cheese.

Mine are, bacon, cheese, tomato, onion, egg, parsley,worchestershire sauce, dry mustard, cayenne pepper, salt and pepper.

Cheese, onion and leek.

smoked salmon and spinach.

I arrange smoked salmon and blanched asparagus on the pastry, then pour over a custard of 2 eggs + 1 egg yolk, a tub of creme fraiche, one minced clove of garlic, the zest of a lemon, snipped chives and lots of black pepper.  Really quite yummy, even if I do say so myself.

poached salmon and shrimps

mix mushrooms (like chanterelle, buttons, porcini etc.)

spring greens (broad beans, courgettes, asparagus and rocket)

mediterranean (roasted veg: aubergines, courgettes, red onions + loadza herbs, + sun-dried tomatoes) and extra philadelphia cheese

but there's nothing like a good original quiche lorraine with the right amount of bacon, gruyere cheese and creme fraiche.... Raymond Blanc (and my mum, bless her) make a great quiche lorraine...  tongue  yummy
