Re: mince storage
Personally, I wouldn't leave it more than a day before eating it (after reheating thoroughly) or putting it in the freezer.

Re: mince storage
You should use mince the same day or freeze immediately ( and then use immediately after thawing.)

Beast, how long do you think it's safe to keep these dishes in the fridge before using? I often make double portions and freeze half but if I have one left over portion I keep it in the fridge and use within 3 days.

Re: mince storage
Within 3 days is safe.
I like to keep things as fresh as possible, but some things (cooked meat in a marinade, such as a beef stew) are better if left overnight and carefully reheated.
This is because, in an acidic marinade, the acids tenderise the meat to make it more succulent. When the meat is cooked, the acids are able to penetrate deeper into the meat. Aside from that, the meat will soak up some of the flavour compounds in the sauce (basically, what is happening is much the same as what happens when you rest meat, and is also similar to what happens when you put cooked veg in water. The meat relaxes, and soaks up some of the moisture, and thus flavour, from the sauce).
