Sauce or Dip for salmon cakes

I would like to try cooking some salmon cakes, wonder what sauce or dip would be nice to go with it? help

i have not tried the Calmon cakes in "ministery of food" book yet but the sauce that is recomended is the tomato, olive, basil & chilli sauce on page 269

I usually make a  dill sauce or a  mustard cheese sauce with fresh parsley.

          Dill Sauce

          1    tbl  Margarine
          1     sm  Onion, quartered & thinly sliced
          1      x  Garlic clove, minced
          1    tbl  + 1 ts flour
        3/4    cup  milk
          2    tbl  Fresh minced dill
        1/2    tsp  Dried tarragon
          2    tsp  Lemon juice
           salt and pepper
                   

SAUCE:

Heat margarine in a small pot. Add onion & garlic & saute over moderate heat till onion is golden.  Sprinkle in the flour & stir till it disappears. Slowly pour in the milk, stirring. Bring to a simmer, then stir in the dill & tarragon. Cook at a simmer till the sauce thickens. Stir in the lemon juice & season to taste.

For mustard cheese sauce as above. Add teaspoon hot english mustard after margarine. Add 1/2 cup tasty cheese after simmer stage, add parsley  instead of dill and tarragon. leave out lemon.

My son created this a couple of weekends ago when I made crab and tuna cakes.

I had mayo, bearnaise and (as must be had in this family- sweet chilli sauce) out.

"A" mixed the bearnaise with some sweet chilli sauce. I shuddered at the thought and kept to my lemon mayo with the sweet chilli on the side.

His sauce worked quite well.

hi hugchoco,
i usually serve fishcakes with a remoulade sauce. here's a quick remoulade recipe:

approx 1 cup of  mayonnaise
2 tbsp. chopped pickled gherkins
2-3 tsps. chopped capers
1 tbsp. chopped parsley
1 tsp mustard
1/2 tsp - 1 tsp chopped tarragon
Some salt and pepper to taste

Just mix everything together in a bowl and let it chill in the fridge for about 30mins.

I've posted this elsewhere, it's excellent with salmon cakes.

Cucumber Mint Sauce

To 1 cup of Greek yogurt (full, low or non-fat) add:
1/4 cup of peeled, seeded, chopped cucumber
1 - 2 sliced scallions, sliced
1 T. chopped mint leaves
2 T. chopped cilantro (optional)
1 T. fresh squeezed lemon juice
Pinch of Salt

Combine the ingredients, served chilled over salmon.  I don't drain the cucumber, if used immediately, it won't become too watery.  If you want to refrigerate sauce overnight, add the cucumber to what you are serving only.

I use dill too... or sometimes tartar sauce all made my way of course!!

Tarragon-chive Dipping Sauce

2/3 cup mayonnaise
1/3 cup fresh tarragon
1 1/3 cups sour cream
3 Tbsp. finely chopped fresh chives
1 tsp. fresh lime juice
pulse the mayonnaise, tarragon and 1/3 cup sour cream together in a food processor until smooth.
Transfer mixture to a bowl and stir in remaining cup sour cream, chives, lime juice, salt and pepper to taste.

Lemon Sauce
1 c. lemon or orange juice
2 tbsp. cornstarch diluted in 1/4 c. cold water
Bring all ingredients to a rolling boil in saucepan. Cook until sauce is clear. Serve hot

Spicy Dipping Sauce

Ingredients:
1/4 cup mayonnaise
1/2 tablespoon soy sauce
1/2 tablespoon oyster sauce
1 tablespoon horseradish

Directions:
Mix well and refrigerate for at least 15 minutes to let flavors mingle
